About Black Garlic
All Hillston Black Garlic products are made from our very own garlic which grows, year-round, alongside potatoes and pumpkins on our farms in Hillston, NSW. For more than 40 years we have been supplying Australian supermarkets and restaurants with freshly flavoursome produce, but it was during 2019 that we began to ferment our signature Black Garlic.
First, we take freshly flavoursome garlic from our farms in Hillston, NSW. Then, we treat these delicious bulbs with low heat and humidity for several weeks, until the cloves turn inky black and develop a caramelised, balsamic-like flavour that’s packed full of umami. Yum.
